Grilled Baby Artichokes

Karen and I are huge
fans of artichokes. My grandmother left me with
a breaded artichoke
recipe, but I altered the recipe to a much more simple "summer-clean" version without breading. Artichokes are
like eating crabs-you get very little for all the hard work. I don't recommend these for a first date or a
red lipstick night, but
otherwise, have fun with
these tough yet tender lil'
guys.

-THE RECIPE-
12 baby artichokes
Balsamic Mayo Dipping Sauce:
1/3 cup mayonnaise
1/4 cup EVOO
1/4 cup balsamic vinegar
1/2 lemon, juiced
1 tsp. garlic paste
1 tsp. salt
2 tsp. black pepper
Cut off the stems. Cut off about 1/4 of the tops. Use kitchen scissors to clip tips of leaves. Steam for 20 mins. Let cool for 5 mins. Cut artichokes in half. Spoon out "choke" (furry center) of the artichoke.
Grill marinade: EVOO, lemon juice, minced garlic, pinch of S&P
Toss artichokes in marinade. Artichokes should be lightly coated in marinade. Grill for 5 mins, inner-face down. Do not move once on the grill. Baby artichokes grill quickly, keep an eye on them!
